Forrest Honey is a process in which coffee cherries are lovingly picked and sorted, their skins and polyps are removed like other types of coffee, but then the beans are sun dried without washing off the sticky-sweet outer layer of the fruit. Since honey processed beans spend less time in water than washed beans do, less fermentation occurs so not much of the sugar in the bean is converted to acid.
The result of this process is sweet, smooth cups of coffee with huge mouthfeel in addition to muted acidity
There’s no actual honey on these beans, despite their name and sticky appearance
